5. Udders
We breed for high quality udders as everyone should. If we have to watch a cow
for nursing problems, she is immediately culled. We also cull for cattle that are
too inefficient and don’t provide enough nutrients to grow a high-quality calf. We
breed for cattle that have high butterfat as it leads to fleshing ability and tender-
ness in the beef.
6. Slick Hides
We have made it a priority in our program to make our cattle as slick as possible.
We want to see truly slick hides or thin hair coats even in winter. Often times,
our calves will carry hair their first winter but by the second winter they become
a slicker hide. We believe this is related to the heat in our environment and the
adaptability in our cattle. Each bull crop seems to be slicker than the one before.
Bulls that aren’t fed simply won’t perform in our heat with too much hair, and so
they fall away quickly.
7. Meat Quality
We have found that our cattle excel in marbling and efficiency in both feedlot
programs and grass-fed programs. We believe this is a result of breeding high
butter-fat cattle that can perform on even low-quality forage. Even though we
don’t keep them on high energy forage all year, our heifers that don’t get bred
on time become grass-finished beef and they consistently grade high-choice in a
22-28-month window. Customers utilizing feedlots have consistently reported high
Choice and Prime grades with good yield grades. It is a priority to us to maintain
this level of performance on the rail as we balance with efficiency on grass.
